new way of eating

We are on week two of eating differently. Really differently! I approached Nathan with the idea of really changing what we eat for a while to see how it would affect us and if we could start living a healthier lifestyle. I thought I was impressed just by saying yes he was willing to try new things...now I'm really impressed!

We have been eating a lot more organic things. Introduced a few organic nuts and seeds to our diet every day...only in a healthy form...peanuts, almonds, soy nuts, pumpkin seeds so far. Lots of fresh fruit and some freeze dried fruit to snack on. Fresh vegetables! Healthier meats, reduced fat items, oh and did I mention GREEN smoothies! Smoothies with spinach, avocado, fruit, and a little plain organic yogurt. (actually pretty good!) Adding fish once a week to our diet.

I've been fixing Nathan's breakfast almost every day to make sure it's healthy and then packing his lunch. I would not have imagined a few weeks ago that I would pack a organic roast beef sandwich on whole wheat bread, carrot sticks with humus, freeze dried bananas and peaches, and a greek yogurt for his lunch! (Probably because before two weeks ago I have NEVER seen him eat these things!) He's liked having the nuts and we do it in small portions, he's enjoyed the smoothies, liked the organic granola, realized he liked greek yogurt, actually been eating things like...zucchini, rainbow chard, spinach salads, and asparagus!

We've also taken things out of our diet. I haven't had a coke in about a week and half. This was really hard for me since I was up to about two a day and I still think about them but it's getting better. We made an agreement that no one in the house would have French Fries for a month. This was not as hard for me but Addison and Nathan ate them more. Eliminated sweets except for rare cases like last Friday when he brought us each home a cookie. I still miss chocolate a lot but I think that's getting better too.

I've been so proud of my husband!! I chuckled at dinner the other night watching him eat and he asked why I was laughing and I told him, "It's almost like a game to see what I can get you to eat next." :) I love filling our fridge with healthy things! I have actually enjoyed making Nathan's breakfast and lunches because I feel like I'm really taking good care of my husband. Nathan and I have tried to feed our kids pretty healthy from the beginning but not taken as much care in ourselves. When I met Nathan he didn't eat healthy at all. His diet consisted almost entirely of bacon burgers, pizza, nachos, hot dogs, french fries, hot wings...his closest thing resembling a vegetable would be the salsa at a Mexican restaurant. He used to cringe when I'd ask him to try things and referred to salads as "Rabbit's Food". I love that he is setting a good example for his children and caring more about living a long, healthy life! I'm proud of myself for trying to do that too! I don't want us to be fanatics. We will do pizza on Fridays most weeks and if we got out to eat or to other people's homes we will eat what they serve. It's really about retraining ourselves to have mostly healthy options and rare junk instead of the other way around.

  1. So, where are you getting your info. on what foods are best? I love the idea of eating healthier, and have been moving that way myself as far as our family is concerned for the last several years. My easiest clue in what's good for us and what's not-so-good is where it comes from. Is it in a box or can? Or did it grow and was harvested? The fewer boxes and cans in the pantry, the fresher the food on the table!

Anyway, I'd love to see some links or info on your sources.

Also, thanks for keeping this blog! I love the notes and updates! So thought provoking, even just the everyday. You are good with words, so keep it up! I also pray for you in your journey as I read more (adoption excitement and all. . .).
